Here is a collection of midis from Evangelion, both original music created for the series as well as classical music used in the episodes and movies. I know midi music is outdated as a format, but this was the best you could hope to listen to quickly over a dialup connection back when we started the page.

Amazon has a fairly complete list of the evangelion soundtracks, and there are always less legal methods available as well.
